ABOUT

The Ecole hôtelière de Lausanne's F&B Chair has been studying changes and challenges in the foodservice market since 2010.

After several studies on the future of foodservice professions and prospective developments in the industry, the Chair’s research now focuses on the impact of sustainable development and societal changes on three main areas: business models and strategies, processes, and products.

Until 2018, the Chair will be supported by Saviva, a member of M-Industrie.

After working as an entrepreneur in the foodservice industry for over 20 years, Dr C. Demen Meier returned to her alma mater as a professor. She also coaches entrepreneurs.

A graduate of EHL, S. Buri worked in the foodservice industry before joining the Chair and specializing in Entrepreneurship & Innovation

C. CORNUZ

CHAIR COLLABORATOR

 

C. Cornuz has a background in the humanities. Her interest in food studies led her to join the F&B Chair while finishing her MA in English literature.
